You edit by working in a layer on top of the page, which is how browser-based PDF editing works. To change existing text, use the whiteout tool to cover the old text, then type the new text on top with the text tool. This is exactly the method the "Text" tool in most PDF editors uses. To rewrite a document from scratch, convert it first with the PDF to Word tool.
Choose the Text tool and click on each blank to type. For checkboxes, use the Check tool to drop a tick, or the Cross tool for an X. The Date tool inserts today's date in one click. When you are done, download the flattened version to lock everything in place.
